Pork

Our pork comes from rare breed Berkshire pigs that are on the Rare Breed Survival Trusts' vulnerable list. Berkshire pork is exceptionally succulent meat with an amazing texture that cannot be beaten. It is considered by some to be the "Kobe beef" of the pig world as the marbling in the meat creates tonnes of flavour.

Berkshires get their black colour from their hair, their skin is actually white, so you don't get black rind or black crackling. Unlike pink pigs they thrive outdoors and aren't prone to sunburn.

The pigs are free to range in large areas of temporary electric fencing, with homemade houses. They get moved every 2-3 weeks to new patches of land to turn over, this helps with the cultivations of the fields and means we rely less on our tractors for field work. And of course a regular change of scenery for the pigs!
